  • 450g fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon unflavored gelatin powder
  • 2 tablespoons cold water
  • 1 cup heavy cream
  • A splash of Remarkable Cream Strawberry & Cream

  1. In a medium saucepan, combine the strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries are soft and the sugar has dissolved, about 5-7 minutes.
  2. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
  3. Add the gelatin mixture to the strawberry mixture and stir until the gelatin has dissolved completely.
  4. Remove from heat and let cool to room temperature.
  5. Add a splash of Remarkable Cream Strawberry & Cream to the strawberry and gelatin mixture.
  6. In a large bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the cooled strawberry mixture into the whipped cream until well combined.
  8. Spoon the mixture into individual serving dishes or one large bowl. Chill for at least 2 hours, or until set.
  9. Garnish with fresh strawberries and serve chilled. Enjoy your delicious and refreshing strawberry mousse!
