Strawberry Mousse

I found this recipe to be incredibly easy to follow and the end result was absolutely delicious. Ingredients:
- 450g fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon unflavored gelatin powder
- 2 tablespoons cold water
- 1 cup heavy cream
- A splash of Remarkable Cream Strawberry & Cream
Instructions:
- In a medium saucepan, combine the strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries are soft and the sugar has dissolved, about 5-7 minutes.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
- Add the gelatin mixture to the strawberry mixture and stir until the gelatin has dissolved completely.
- Remove from heat and let cool to room temperature.
- Add a splash of Remarkable Cream Strawberry & Cream to the strawberry and gelatin mixture.
- In a large bowl, whip the heavy cream until stiff peaks form.
- Gently fold the cooled strawberry mixture into the whipped cream until well combined.
- Spoon the mixture into individual serving dishes or one large bowl. Chill for at least 2 hours, or until set.
- Garnish with fresh strawberries and serve chilled. Enjoy your delicious and refreshing strawberry mousse!
