Ingredients

50g Whittaker's White Chocolate

125ml heavy cream

2g agar agar

50ml Remarkable Cream Raspberry White Chocolate

1 fresh egg white
-
1 tsp sugar (optional, for whipping the egg white)

Fresh raspberries

Raspberry jam
Method
1. Melt the Chocolate Base
Gently melt 50g Whittaker's White Chocolate over low heat in a saucepan or double boiler.
2. Make the Cream Mixture
Add 125ml heavy cream to the melted chocolate. Stir gently over low heat until fully combined.
3. Set with Agar Agar
Mix in 2g agar agar, stirring constantly.
Bring the mixture to a gentle simmer for 1–2 minutes, stirring continuously.
4. Add the Flavour
Remove from heat and stir in 50ml of Remarkable Cream Raspberry White Chocolate.
Set aside to cool slightly.
5. Whip the Egg White
In a clean bowl, whisk 1 fresh egg white until soft peaks form. (Optional: add 1 tsp sugar for extra stability.)
6. Fold for Fluffiness
Once the chocolate-cream mixture is warm (not hot), gently fold the whipped egg white into it.
Be careful to keep the mixture light and airy.
7. Chill
Pour into serving glasses or ramekins.
Refrigerate for 4–6 hours or overnight until fully set.
8. Make the Raspberry Topping
Combine equal parts fresh raspberries and raspberry jam in a saucepan.
Heat gently over medium heat for about 5 minutes until the berries soften.
9. Top & Serve
Spoon the warm raspberry sauce over the chilled mousse just before serving.
(Optional: Place in the freezer for 1 hour if you prefer a partially set topping.)
