    Pistachio Cheesecake Recipe with Pistachio Cream Liqueur

    Ingredients

    Biscuit Base

    • 150g digestive biscuits
    • 75g butter, melted

    Pistachio Cheesecake Filling

    • 1000g cream cheese
    • 200g Remarkable Cream Pistachio Cream Liqueur
    • 60g pistachio paste
    • 192g sugar
    • 4 eggs
    • 30g cornflour

    Pistachio Cream Topping

    • 500g thickened cream
    • 50g Remarkable Cream Pistachio Cream Liqueur
    • 50g chopped pistachios

    Method

    Step 1: Prepare the Biscuit Base

    1. Crush the digestive biscuits into fine crumbs.
    2. Mix thoroughly with the melted butter.
    3. Press firmly into the base of a lined cake tin.
    4. Refrigerate for 15–20 minutes to set.

    Step 2: Make the Pistachio Cheesecake Filling

    1. Beat the cream cheese and sugar until smooth and creamy.
    2. Add the pistachio paste and Remarkable Cream Pistachio Cream Liqueur.
    3. Add the eggs one at a time, mixing well after each addition.
    4. Fold through the cornflour until completely smooth.
    5. Pour the mixture over the chilled biscuit base.

    Step 3: Bake

    1. Preheat the oven to 150°C.
    2. Place the cheesecake tin inside a larger roasting tray.
    3. Fill the roasting tray with hot water to create a water bath.
    4. Bake for approximately 40 minutes.

    The cheesecake should still have a slight wobble in the centre when removed from the oven.

    Step 4: Cool and Chill

    1. Allow the cheesecake to cool gradually at room temperature.
    2. Refrigerate overnight for the best texture and flavour development.

    Step 5: Prepare the Topping

    1. Softly whip the thickened cream.
    2. Fold through the Pistachio Cream Liqueur.
    3. Spread evenly over the chilled cheesecake.
    4. Finish with a generous sprinkle of chopped pistachios.
